Blue Oyster Mushrooms

Pleurotus ostreatus
Cultivated in Albuquerque, NM

Blue Oyster mushrooms have a spongy, dense, and slightly chewy consistency. When raw, the mushrooms bear a scent reminiscent of the seashore combined with anise and have a subtly metallic flavor. Once cooked, Blue Oyster mushrooms soften, developing a velvety, tender texture and contain a mild, earthy, and savory taste with licorice-like nuances.

Delicate, briny seafood flavor, their texture is velvety and dense, and when pan seared, their edges turn deliciously crisp.

Golden Oyster Mushrooms

Cultivated in Albuquerque, NM

These mushrooms have a light and fresh scent that some say smells like watermelon. When cooked, they develop a fleshy, tender, and pleasantly chewy consistency, release a fruity aroma reminiscent of aged red wine, and have a mild, nutty, and sweet taste with cashew-like nuances to citrus or cinnamon-like undertones.

Black Pearl Mushrooms

The Black Pearl Mushroom boasts a strikingly dark hue that ranges from deep purple to black. Its caps are velvety and possess a characteristic sheen, resembling the surface of a precious gem. The gills underneath the cap are delicate and often appear ivory-white, creating a beautiful contrast against the dark exterior. The Black Pearl Mushroom offers a robust earthy flavor reminiscent of forest floors and rich soil. This earthiness is complemented by subtle undertones of umami, adding depth and complexity to its taste profile. Black Pearl is nutty flavor and has a firm, meaty texture. The texture of the Black Pearl Mushroom is tender yet substantial, with a firm bite that holds up well in cooking. When properly prepared, it maintains a satisfyingly meaty texture, making it an excellent vegetarian option for those seeking a hearty alternative to traditional proteins.

King Oyster or King Trumpet Mushrooms

Cultivated in Albuquerque, NM

King Trumpet mushrooms are medium to large in size and are easily identified by their thick cylindrical stem and their small, flattened cap. The ivory to white stems can grow up to twenty centimeters in length, five centimeters in diameter, and are firm, dense, and chewy. The small, smooth caps are grey to brown and have rounded, curved edges. Underneath the cap, the stem and cap are joined by off-white, thin, short, gills. Raw King Trumpets, though dense and spongy in texture, lack aroma and flavor, but when cooked, the mushrooms have a savory umami flavor, a soft, crunchy texture, and a mild flavor reminiscent of abalone.

Beech, Shimeji Mushrooms

Brown Hon Shimeji mushrooms are small to medium in size, growing in tightly packed bunches with convex, rounded, button caps and slender stems. The petite caps are buff to burlap-colored, smooth, and crisp. The ivory to cream-colored stems are slender, averaging 5-7 centimeters in height, and connect to a thick, white, porous inedible base. Brown Hon Shimeji mushrooms have piquant, savory aromas and a sharp, bitter flavor when fresh. When cooked, the texture is tender and chewy with a mild, herbal, and nutty flavor.

Lion’s Mane
